Stanley F. Bronstein

Attorney, CPA and Author

As his 50th birthday grew nearer, Stanley decided enough was enough. He was tired of living a life of obesity.

Since February 2009, Stanley has dropped from a weight of 320 pounds to the mid-190s.  He has gone from a life of inactivity to walking a half-marathon daily and full marathons on many weekends.

Stanley believes that the only way We The People of the United States are going to solve our problems (especially the growing problem of obesity) is by asking the right questions and by coming up with appropriate answers.

Through Foundation EON, he hopes to help you (and America) do just that.

Julie Polacek Bronstein

Vice-President and Member Board of Directors

Julie is quite simply, a volunteer extraordinaire. When it comes to helping people or animals, Julie will be among the first to lend a hand.

Among her numerous volunteer activities are Meals on Wheels, Pets on Wheels, the Arizona Humane Society, Salvation Army Christmas Angels and the Brandeis University Book and Author activities.

Always ready to help, Julie plays an invaluable, creative role in Foundation EON’s activities.





Stephanie Ablett, CNP

Stephanie Ablett is a Certified Holistic Nutritionist, earning her designation at the Institute of Holistic Nutrition in Toronto, Canada.

Stephanie is dedicated to helping her clients reach their health and lifestyle goals with education and inspiration. She believes we all have the power within us to heal ourselves and that we just need to be inspired and educated in how to do it!

Stephanie loves to focus on plant based nutrition and uses her knowledge in nutrition, herbal medicine, motivation, and other modalities to help others regain their health and reclaim their life!

Paula Antonini

Holistic Health Counselor and Nutrition Coach

After losing her mother to a stroke at the age of 55, and after spending 40 years as a senior executive in Sales Management, Antonini returned to school in her quest to discover how to stay healthy throughout the aging process. Dr. Jana D. Bogs, MS, PhD

Research Scientist and Consultant

In an attempt to overcome health challenges in her and her family’s lives, Jana delved deeply into the field of nutrition. She received a bachelor’s degree in the subject and worked as a nutritionist for a number of years. What came to be apparent is that foods were no longer what they should be in terms of nutrient density. So-called “modern” farming practices had depleted the soils and resulted in poor nutritional quality foods. Even organic foods were not significantly more nutrient dense. Jana decided to go back to the dirt and “create health from the soil up”. She got a PhD in horticulture with an emphasis on food science. Now Dr. Bogs works with farmers, gardeners and food manufacturers helping them produce the most nutrient-rich foods possible which deeply nourish and satisfy the body’s cravings. Consumption of these foods helps achieve a natural normalization of body weight and optimal health.

Steve Carney

Certified Nutrition / Fitness and Health Coach

Steve Carney developed a passion for overcoming life challenges because of childhood illness. He learned what it’s like to be hospitalized and go through shots, surgeries, pain, etc. It was a real lesson in what happens when you lose your health. He even had to learn how to walk again! He overcame those challenges, including a limp that he had until his 30s! Steve has had to overcome other life challenges too, including dyslexia, excess weight, allergies, blood sugar problems, knee pain, a thyroid issue and even a recent car accident!

Steve has dual certifications as a Certified Nutrition/Fitness and Health Coach, and a Certified Professional Life Coach (CPC). His passion for health and longevity goes back 20 years and he still reads research daily (nutrition, supplements, health, disease and drugs).

His mission is to end sickness now by helping others with better nutrition, activity, and to live a longer, healthier life!

Joanna Chodorowska

Joanna helps you alleviate health issues as they are related to food.  She specializes in helping you make the connection between foods that aggravate your symptoms so you can avoid those, and introduces alternative foods you can eat.  Food becomes an adventure rather than a drudgery.

Joanna helps to incorporate healthier choices you can manage every day.  If it is not a plan you can do every day, then it is not the right plan for you.  She incorporates all real food options, such as raw foods, plant based foods, juicing, natural animal proteins, wheat and gluten free, allergy free and utilizing vegetables in season. All these aspects are in different ratios for each person, as each person is individual and requires different sources of respective nutrients.  Joanna helps you to understand why you are eliminating a food and for how long to help the body repair and rebuild.  Without that understanding, it can be challenging to stick with a program, even if it is temporary.  She wants to make food fun and includes variety into each and every day’s meals.

Suzanne de Boisblanc-Tyler, RD LD/N

Registered Dietician/Nutritionist

Suzanne is a driving force in the New Orleans community promoting total body wellness. She is recognized for her ability to interview clients, assess their eating habits, develop individualized treatment plans, promote healthy lifestyles, and follow up and track their progress. She has a keen understanding and vast knowledge of human behavior and food habits, as well as the ability to motivate her clients in making healthy lifestyle choices.

She has also been a featured speaker at nutritional events including Women’s and Men’s Health Day, Senior Wellness Programs, and the Baptist Health Corporate Wellness Program. She was honored as the Nutrition Educator of the Year in 1999 for her accomplishments in the field.  Her professional affiliations include the Academy of Nutrition and Dietetics, Nutrition for Public Health Practice Group, World Affairs Council of New Orleans, New Orleans Citizens for Diplomacy Council, and the National Association of Professional Women.   She completed the Program in Dietetics and the Approved Professional Practice Program from the Florida International University in Miami. She continued her studies at the Pritikin Institute for Longevity as an intern.

Associate Professor Barbora de Courten, MD, MPH, PhD, FRACP

University of Copenhagen

Associate Professor

General physician (specialist in Internal Medicine and a fellow of the Royal College of Physicians) with extensive experience in clinical research and public health in the area of non-communicable disease in particular in obesity, type 2 diabetes and cardiovascular diseases.

She received her MD and specialist degree at the Comenius University in Bratislava and her PhD while working at the National Institutes of Health on the epidemiology and pathophysiology of type 2 diabetes with the Pima Indians.

More recently, she developed an interest in public health and acquired her MPH at Monash University.


Professor Maximilian de Courten, MD MPH

University of Copenhagen


Professor de Courten is the inaugural Professor of Global Public Health at the Copenhagen School of Global Health based at the University of Copenhagen.

He received his MD degree at the University of Basel and his MPH from the University of Arizona while working at the National Institutes of Health on the epidemiology of diabetes with the Pima Indians.

As a specialist in chronic disease epidemiology and control, Professor de Courten was staff of the World Health Organization at headquarters and in the South Pacific. Before joining the School of Global Health, he was based at Monash University in Australia.

He specializes in Global Public Health, chronic disease surveillance, community-based interventions and chronic disease prevention.


Sally Gabriel, PhD – Holistic Nutrition

Dr. Gabriel is a certified health coach, nutritionist and healthy foods advocate. When she was younger, she was a yo-yo dieter, gaining and losing the same 20 pounds a year. After switching to a whole foods diet, adding exercise, and therapy for food addiction, she has remained at a normal weight for the last 20 years.

Through her business, Second Act Health, she uses a holistic approach to weight loss and shares her knowledge and experience with others who want to make lasting positive changes in their lives.

Dr. Gabriel has a PhD in holistic nutrition, and certifications in both health coaching and nutrition. She lives in Sarasota, Florida with her husband and two animals.

“Captain Chas” Melichar

Fitness & Nutrition Tester and Guinea Pig

In 2009, after decades of being a couch potato, a friend called him “Super-Fluffy”. Pilots, particularly major airline pilots, do not like being called “Fluffy”. Decidedly annoyed, he decided to stop whining and do something about eradicating fluffiness in his life.

In searching for that goal, he has tried a lot of gear and nutrition and chosen both wisely, and poorly. In the hope that others can learn from his mistakes and successes, he shares the journey on his blog.

The journey has included P90X, Yoga, numerous marathons, ultra-marathons, and triathlons. His longest races include several Iron-length triathlons (2.4 mi swim/112mi Bike/26.2mi run) and twice the Comrades (Ultra) Marathon – the Ultimate Human Race, the hardest and largest road-race (56mi) in the world. He says he is truly a purely average to below average guy just trying to do extraordinary things.

Karen Russell

Certified Health Coach and Nutritionist

Karen received her training to practice health coaching at the Institute for Integrative Nutrition in conjunction with Columbia University and also has a degree in Dietetics. She’s a member of the American Association of Drugless Practitioners and believes that you can heal your body holistically with food and natural supplements. She offers saliva testing for hormones, adrenal issues, hidden food sensitivities or infections. She does cooking classes, educational seminars, movie nights and other fun events like chocolate tastings!

Jon Searles

Food Science and Technology

Jon Searles is a graduate of Texas A&M University with a Bachelors of Science in Food Science and Technology.

Jon held management positions in the food industry for over 26 years. His experience includes overseeing construction of new production facilities, remodeling of existing facilities, and expanding capabilities of companies in the food industry. He has extensive experience in food packaging and machinery as well as government regulations and food industry standards.

Recently, he co-owned and operated a successful New England bakery operation which sold in 2011.

Over the years Jon has helped to develop and promote new products in the food industry. Jon currently assists small food manufacturers and start-ups that need assistance with issues as they relate to food manufacturing.




Chef Jason Wyrick

Jason Wyrick is the executive chef and publisher of The Vegan Culinary Experience, an educational vegan culinary magazine with a readership of over 35,000 and the owner and executive chef of Devil Spice, Arizona’s only dedicated vegan catering company.

In 2001, Chef Jason reversed his diabetes by switching to a low-fat,  vegan diet and subsequently left his position as the Director of Marketing for an IT company to become a chef and instructor to help others. Since then, he has been featured by the NY Times, has been a NY Times contributor, has been featured in Vegetarian Times, has been featured in Edible Phoenix, and the Arizona Republic, and has had numerous local television appearances.

He has catered for companies such as Google, Frank Lloyd Wright Foundation, and Farm Sanctuary, has been featured in the Scottsdale Culinary Festival’s premier event. He has been a guest instructor at Scottsdale Culinary Institute, and is the first vegan instructor to teach in the prestigious Le Cordon Bleu program.

He has worked with Dr. John McDougall, Dr. Gabriel Cousens, and Dr. Neal Barnard. Recently, Chef Jason co-authored a NY Times best-selling book with Dr. Barnard entitled 21-Day Weight Loss Kickstart.
